Crockpot Steak Soup

Y’all know that Monday’s are crockpot meals at our house (read here to find out why). This weekend hubs started with a sore throat and went down quick. I made Steak Soup last night and it was awesome! It is a rich and hearty complete meal that won’t leave you hungry. I wasn’t going to share the recipe with you because there are so many variations online. But it was even better reheated for lunch so I figured it was worth writing down my concoction so at least I can repeat it!

Ingredients

  • 1.5 lbs steak cubed (I used bone in venison steaks because that was in the freezer, I put the bone in the crockpot to add more flavor)

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 1/2 cup flour

  • 3 Tbsp olive oil

  • 4 cups beef broth

  • 2 cups chicken broth

  • 1 packet of onion soup mix (I keep a mason jar full of the homemade mix)

  • 1 Tbsp paprika

  • 1/2 tsp marjoram

  • 1 Tbsp parsley dried

  • 1 bay leaf

  • splash of Worcestershire sauce

  • 1 bag of frozen stew vegetables

  • 1/2 onion

  • 1/2 zucchini (this probably isn’t necessary but it was about to go bad in my frig)

  • 1 6 oz. can tomato paste

  • 1 16 oz. can whole kernel corn 

Directions:

  1. Mix together salt, pepper and flour into a large plastic bag.  Add in cubed meat and shake to coat.

  2. Heat oil in a large pan over medium heat.  Add steak and cook until lightly browned on all sides.

  3. Add together all the remaining ingredients except corn into a slow cooker.  Add in steak.

  4. Cook on high for 8 hours or until veggies are tender. 

  5. Add in corn and turn off heat for 30 minutes before serving.

Jackson can tell you the smells coming from the kitchen all day were amazing! I made the mistake of loading the dishwasher and then taking a phone call. When I returned all the spoons and whatnot I had been using to cook had been licked clean. He swears it wasn’t him, but I have my doubts. He never helps himself to the dirty stuff in the dishwasher so that was when I started thinking this soup would be delicious!

Hubs ate it up which is progress with his sore throat. Unfortunately, it didn’t work like a magic medicine and get him back to 100%.

Back to doctoring on my boy. We have to get him feeling better and de-germ the house before everything gets contaminated. If you have any get well meals or germ removal cleaning tricks please comment below! I need all the help I can get!
