Mediterranean Chicken Packets
My mother and father in law made parchment paper meals for us on their last two visits. Both times it was delicious! I finally decided to try my hand at this technique and let me tell you this will definitely go on our regular meal rotation for the easy convenience and amazing flavors.
Mediterranean Chicken Packets
Total Time: 35 minutes
Prep: 15 minutes
Servings: 4
Ingredients:
4 boneless, skinless chicken breast halves (6-8 ounces each)
Coarse salt and ground pepper
1 can (14.5 ounces) diced tomatoes, drained
4 artichoke hearts (from a 14-ounce can), quartered
12 Kalamata olives, halved and pitted
4 teaspoons of capers
1/2 cup crumbled feta (2 ounces)
1/2 teaspoon Italian seasoning
Directions:
1) Preheat oven to 375 degrees. Place four 12-inch squares of parchment paper on work surface. Place a chicken breast on one half of each square, leaving a 2-in border. Season with salt and pepper.
2) Mix tomatoes, artichoke hearts, olives, capers, and feta in a bowl. Top chicken dividing evenly. Sprinkle with Italian seasoning. Fold parchment over ingredients and crimp edges to seal.
3) Place packets on a rimmed baking sheet. Bake until chicken is opaque throughout, 25-30 minutes.
Serving:
Use a wide spatula to move chicken packets from the baking sheet to plates without opening or tearing them.
I think boiled new potatoes or buttered orzo would be good partners for this dish. We decided to eat ours over pita bread with lettuce and humus.
