Beat Mondayitus with Crockpot Meal Monday
I’m not an expert at life or anything. I’m just running around with no clue figuring it out on the fly. But I’ll let you in on a secret that helps me beat Mondayitus and stay in the right frame of mind all week; crockpot meal Monday’s. I know what you’re thinking, how does a crockpot meal one night change your whole week?! Well let me tell you.
Crockpot meal Mondays are a complete game changer. The meal can be totally prepped before hand so Monday morning it’s just dump, put on low, and out the door. After work there’s no stopping at the grocery store adding unnecessary chaos, no rushing home to get dinner prepped and in the oven, nothing but nice calm delicious smells seeping into the garage as you park in the afternoon. Crockpot meals are typically big, which mean leftovers, which makes packing lunches and tossing it with something else to make a whole new meal later in the week a breeze. For example, if I do roast; night one will usually be roast rice and gravy but later in the week I'll do something like stuffed baked potatoes with the roast instead of the usual bacon on top or some derivative of roast beef pot pie. Not to mention the available time factor! I’ve learned that if I don’t go hard working out on Monday I’m more likely to slack and come up with excuses for the rest of the week. Being able to rework the meat into a completely different meal later in the week means another night with plenty of extra time. Crockpot meal Monday holds me more accountable to getting the week going on the right foot since I can’t exactly use the excuse of needing to cook dinner.
Some of our favorite crockpot Monday meals that are on the regular rotation are roast (deer beef elk or whatever hubs has hunted and stocked in the freezer), philly cheese steak, and BBQ ribs.
This week we are venturing out and trying a new one; pork tenderloin by Whisking Mama. We shall see how this one turns out. I've never done a pork tenderloin in the crockpot. Fingers crossed!
