Party Like a Pineapple

This past weekend was a complete wonderful whirlwind! The Mr. and I went to Richmond to co-host a house warming and 30th birthday bash for my grand-littles, Danielle. We went with a Glam Pineapple and Flamingo theme for the party. Megan had set the bar high with all the inspiration she found for the theme so I got to work crafting + shipping things north. I'm so proud how the signs, banners, door hanger, straws, toothpicks, hand towels, and cake topper I made turned out!

I knew the weekend was going to be epic when I was waiting in line for the bathroom in Atlanta and got a text from the Mr. with "I spotted some Lilly." If you don't know, Lilly is Lilly Pulitzer; which is my favorite sign of spring and summer. When we first met he asked me to go on a date on his boat on a Saturday morning. That Saturday happened to be the Lilly for Target madness; aka the equivalent of Black Friday for all the girls who love bright colors and shift dresses. I had to bring him up to speed on my reasoning to prioritize Lilly for cheap over any sort of initial date ANYONE planned. Since then he has been very impressive with his advanced learning curve and ability to spot Lilly; down side is I can't slip one in without him knowing the price. 

Once we arrived in Richmond I was in good company with the girls! As Megan and I finished up the last details for Danielle's house warming and 30th birthday party we knew this Kate Spade Pineapple and Flamingo theme was way too good not to share and use again. Listed below is each recipe we used (copied for convenient reference) but linked it to the original if you would like extra pictures, videos, and directions. We were so pleased with how everything turned out I'm now following all of the blogs we referenced so I can try their other great ideas!

Hippie Juice Punch

We got our inspiration from STAYGLAM and put our own twist based on the supplies we had available. This punch is silent but deadly especially topped off with a splash of champagne!

  • 1 cup Vodka
  • 1/3 cup Malibu Coconut Rum
  • 1/3 cup Triple Sec
  • 4 scoops Country Time Pink Lemonade mix
  • 4 cups water
  • 1/2 small seedless watermelon (cut in chunks)
  • 1 bag froze fruit mix (strawberries, blueberries, raspberries, and blackberries)

Pineapple Salsa

My Mr. was questioning this concoction until he tasted it. This recipe by Averie Cooks was amazing! I can't wait to try it as a chicken marinade and sauce later this week!

  • 1 1/2 cups DOLE Frozen Pineapple Chunks, thawed, drained, and diced small
  • 1 to 1 1/2 cups bell pepper, seeded and diced small (from about 1 small bell pepper; I used yellow, use your favorite color)
  • 1 medium Roma tomato, diced small
  • 1/2 cup fresh cilantro leaves, finely chopped
  • 1/4 cup red onion, peeled and diced small
  • about 2 tablespoons lime juice, or to taste
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon freshly ground black pepper, or to taste
  • pinch granulated sugar, optional and to taste

Directions:

    To a large bowl, add all ingredients, stir to combine, taste, and check for flavor balance. Make any necessary tweaks based on personal preference, i.e. more salt, pinch of sugar, etc. Serve immediately or cover, refrigerate, and serve chilled. Salsa will keep airtight for up to 5 days in the fridge, noting that it will become more watery as time passes as the produce releases its natural juices. I prefer it about 4 to 12 hours later, after the flavors have married and it's been chilled.

    Hawaiian Sliders

    We found the recipe below on the Soccer Mom Blog and it was perfect!

    • 2- 2 ounce packets ham
    • 1- 4 ounce block of cheese
    • 1 package Hawaiian buns
    • 1/2 cup butter
    • 1 tablespoon minced garlic
    • 1 tablespoon Worcestershire sauce
    • 1/2 can pineapple slices

    Directions:

    1. Preheat oven to 350 F.
    2. Slice Hawaiian buns in half as a sheet.
    3. Layer the bottom half of buns, ham, cheese, pineapple, and then the top half of the buns in a large casserole dish.
    4. In a small saucepan, melt the butter with the garlic and Worcestershire sauce.
    5. Pour butter mixture over the buns.
    6. Cover sliders and bake 30-40 minutes until butter is fully absorbed.

    Barbecue Pineapple Meatballs

    Lil' Luna nailed this recipe! It was super easy and delicious. We kept them warm in a crockpot for the party and they stayed great all night.

    • ½ cup barbecue sauce
    • ½ cup undrained canned crushed pineapple
    • 1 - 16 oz. package frozen fully cooked meatballs
    • salt & pepper

    Directions:

    1. Add barbecue sauce and crushed pineapple to a medium pot. Add salt and pepper to taste. Mix well.
    2. Add meatballs and stir until all coated. Bring to boil and simmer for 8-10 minutes if meatballs are unthawed or for 14-16 minutes if meatballs are frozen.
    3. Serve immediately.

    Cajun Caviar

    Mix together plain whipped cream cheese and pepper jelly then serve with crackers, wheat thins, or whatever you like best.
